If you love flavour and feeling good from the inside out, then this recipe is for you!


This tantalising combination of fresh roasted vegetables seasoned with our Mild Chilli Spiced Dukkah is gorgeous on its own, but combine them with hummus and toasted flatbread and oh, my goodness… it’s the flavour bomb!


For lunch or dinner, on your own or with a group of friends, this dish is simply a winner!

INGREDIENTS

For the roast vegetables:

  • 1 small eggplant

  • 1 medium zucchini (courgette)

  • 150g tomato medley

  • 1 red onion

  • Table salt to taste 

  • Extra virgin olive oil

  • Mild Chilli Spiced Dukkah

Chop the eggplant and zucchini into chunky pieces.
Sprinkle liberally with table salt and leave to sit for approximately 20 minutes. This helps to bring out the moisture from the eggplant and zucchini and starts to season them.

Remove the stalks from the tomatoes and then chop them into chunks as desired.
Peel and slice the red onion into wedges approximately 5mm thick at the outside edge.

After approximately 20 minutes pat the eggplant and zucchini dry with paper towel. You might be surprised how much moisture you will remove so be generous with paper towel!

Scatter all vegetables on to a baking tray lined with baking paper (this makes washing up so much easier!).
Drizzle the vegetables lightly with extra virgin olive oil.

Sprinkle with Mild Chilli Spiced Dukkah to taste. The flavours will infuse into the vegetables during roasting. If you prefer more heat, add chilli or more chilli flakes to your taste.
Bake for 50-60 minutes at 190°C (fan forced) or until cooked to your liking.

Toast flatbread (both sides) in a dry pan over a medium-high heat. You can make your own or use store bought as you like.
Once toasted cut into wedges.

To serve, place a generous dollop of hummus on the bottom of the plate and spread evenly.
Top with roasted vegetables.
Place the toasted flatbread wedges on the side of the plate.
Sprinkle lightly with Mild Chilli Spiced Dukkah – be sparing here as it's for garnish only.
