On the weekends we are usually up well before sunrise, packing to bring our Pop-Up Shops to a market near you. Being from the Macedon Ranges, its often a touch on the cold side… did we tell you it snows here?
So, it’s nice some mornings to have a hot healthy breakfast that we can reheat in a minute and have on the go. Thus, these Brekkie Frittatas were born!
INGREDIENTS
Per Frittata

2 Slices of Sopressa (mild or hot to taste)
-
Grated Tasty Cheese (enough to half fill each mould)

1/3 Spring Onion
-
2-3 pieces of Sun-dried Tomato
-
1 Egg
-
Feta to crumble
-
Mild Chilli Spiced Dukkah to sprinkle
1.
Line a muffin pan with 2 slices of Sopressa Salami per mould.
2.
Add grated cheese, sliced spring onions and sun-dried tomatoes into each mould.
3.
Lightly beat eggs (1 per muffin mould) and pour into the moulds.
4.
Crumble in some fetta and add a generous sprinkle of Mild Spice Dukkah.
5.
Bake at 200C degrees for 15-20 mins until cooked through.
Pro tip: You can make batches and freeze them. Simply reheat for your next picnic, day trip or brekkie on the go!
